Kerala Style Crab (Njandu) Roast
INGREDIENTS:
- Crab - 500 gram (cut and cleaned)
- Coconut oil - 2 to 3 tbsp
- Curry leaves - 3 sprig
- Onion - 2 big
- Ginger garlic paste - 2 tbsp
- Green chilly - 2 (slit)
- Turmeric powder - ¼ tsp
- Chilli powder - 1 ½ tsp
- Coriander powder - 2 tsp
- Garam masala powder - 1 tsp
- Pepper powder - 1 ½ tsp
- Tomato - 1
- Salt - to taste
- water
- Heat coconut oil in a kadai or clay pot (mannchatti).
- Add chopped onions, green chilly, curry leaves, and a little salt. Saute till the onions become transparent.
- Add in the ginger garlic paste and saute for 1-2 mins.
- Add all the powders one by one on a low flame and saute till the raw smell goes.
- Add in the chopped tomatoes and cook till nice and soft. Check the salt.
- Add the crab and mix well with the masala. Add half a cup of water and cook on a medium flame.
- Cook until gravy thickens. Garnish with curry leaves and serve hot!
