Muringakkaya Thoran / Drumstick Thoran
INGREDIENTS:
FOR BOILING:
- Drumstick / Muringakkaya - 5 numbers
- Salt
- Turmeric powder - ¼ tsp
- Water
FOR GRINDING:
- Coconut - ½ cup
- Turmeric powder - ¼ tsp
- Green chili - 2
- Cumin seeds - ½ tsp
FOR SEASONING:
- Coconut oil
- Mustard seeds - ½ tsp
- Dry red chili - 2 numbers
- Green chili - 2
- Onion - ½
- Curry leaves - 2 sprig
- Chilli powder - ½ tsp
METHOD:
- Peel and cut the drumstick into small pieces.
- In a pan, add drumstick along with turmeric powder, salt, and water. Cover and cook in low flame for about 5 minutes.
- Cook till the drumstick pieces are dry. Set them aside.
- Grind together the ingredients listed under "for grinding" without adding water to form a smooth paste. Keep aside.
- In a pan, heat coconut oil.
- Splutter mustard seeds and fry dry red chilies and curry leaves.
- Add onions and green chilies and saute well.
- Add chilli powder and saute till the raw smell goes.
- Now
add coconut paste, cook in low flame
for at least 2 minutes until the raw smell of coconut mixture leaves.
- Now
transfer the cooked drumstick to the pan. Gently mix them well and let it cook for at least 5 minutes.
- Make sure the masala reach each drumstick pieces.
- Serve hot as a side dish to rice.
TIPS:
- While
boiling drumstick make sure you add only the required amount of water.
