Muringakkaya Thoran / Drumstick Thoran

INGREDIENTS:

FOR BOILING:

    • Drumstick / Muringakkaya - 5 numbers
    • Salt
    • Turmeric powder - ¼ tsp
    • Water

FOR GRINDING:

    • Coconut - ½ cup
    • Turmeric powder - ¼ tsp
    • Green chili - 2
    • Cumin seeds - ½ tsp

FOR SEASONING:

    • Coconut oil
    • Mustard seeds - ½ tsp
    • Dry red chili - 2 numbers
    • Green chili - 2
    • Onion - ½ 
    • Curry leaves - 2 sprig
    • Chilli powder - ½ tsp

METHOD:

    1. Peel and cut the drumstick into small pieces.
    2. In a pan, add drumstick along with turmeric powder, salt, and waterCover and cook in low flame for about 5 minutes.
    3. Cook till the drumstick pieces are dry. Set them aside.
    4. Grind together the ingredients listed under "for grinding" without adding water to form a smooth paste. Keep aside.
    5. In a pan, heat coconut oil.
    6. Splutter mustard seeds and fry dry red chilies and curry leaves.
    7. Add onions and green chilies and saute well.
    8. Add chilli powder and saute till the raw smell goes.
    9.  Now add coconut paste, cook in low flame for at least 2 minutes until the raw smell of coconut mixture leaves.
    10. Now transfer the cooked drumstick to the pan. Gently mix them well and let it cook for at least 5 minutes.
    11. Make sure the masala reach each drumstick pieces.
    12. Serve hot as a side dish to rice.

TIPS:

    • While boiling drumstick make sure you add only the required amount of water.
