INGREDIENTS:
FOR COOKING MUTTON:
- Mutton - 250 g
- Salt
- Turmeric powder - ¼ tsp
- Pepper powder - 1 tsp
- Garam masala - ½ tsp
- Green chili - 2-3
- Coriander powder - ½ tsp
- Coriander leaves
- Ginger garlic paste - 2 tsp
- Onion - ½
FOR SPRING ROLL STUFFING:
- Oil
- Onion - 2-3
- Ginger garlic paste - 1 tbsp
- Green Chilli - 2-3
- Coriander leaves - ½ cup
- Salt
- Pepper powder - 1 tsp
- Garam masala - ½ tsp
- Curry leaves - 1 sprig
FOR SPRING ROLL SHEETS:
- Maida - 1 cup
- Egg - 1
- Salt
- Water
FOR COATING:
- Egg - 1
- Pepper powder
- Salt
- Bread crumbs
- Maida paste (refer tips)
METHOD:
FILLING:
- In a cooker, put all the ingredients listed under " for cooking mutton" and Cook on a medium flame
for 4-5 whistles.
- Mince the cooked mutton and keep aside.
- In a pan, heat oil.
- Add chopped onions, green chili, and curry leaves. Saute till the onions become transparent.
- Add ginger-garlic paste and saute for a minute.
- Add Garam masala, pepper powder and salt one by one on a
low flame and saute till the raw smell goes.
- Add the minced mutton and coriander leaves. mix well.
SHEET:
- In a bowl, add maida, salt, egg and mix it with water to get a smooth paste.
- Heat a pan and make dosa.
COATING:
- In a bowl beat egg, pepper, and salt.
- In another bowl, add the breadcrumbs.
- Place the filling in the middle. Roll the dosa like a spring roll and seal the edges tightly with maida paste.
- Dip it in egg batter and then in breadcrumbs.
- In a pan heat oil and deep fry. Serve hot.
TIPS:
- To make maida paste: In a bowl take 4 tablespoons refined flour along with few drops of water to make a thick paste.
- You can also use rusk powder instead of breadcrumbs.
