Banana Cake | Malabar kaipola | Mutta kums

INGREDIENTS:

    • Ripe Banana ( nendra pazham ) - 2 numbers
    • Cashew nut - 10
    • Raisins - 10
    • Ghee - 2 tbsp
    • Egg - 5
    • Cardamom powder - ¼ tsp
    • Baking soda - a pinch
    • Sugar - 2 tbsp

METHOD:

    1. Peel and cut the bananas into small pieces.
    2. In a pan, heat ghee.
    3. Fry cashews and raisins and keep them aside.
    4. To the same ghee, add banana pieces. saute well till the bananas turn slightly brown.
    5. In a bowl add fried bananas, eggs, cardamom powder, baking soda, and sugar. whisk them well.
    6.  In a nonstick pan, heat ghee
    7. Pour the egg-banana mixture into it .
    8. Top the mixture with fried raisins and cashews.
    9. Cover the lid and leave it in low flame till its cooked till the top.
    10. With a fork check whether the inside is cooked or not.
    11. Once Cooked switch off the flame.
    12. Flip the kaipola and leave it open for sometimes about 2-3 minutes till the top gets caramelized.

TIPS:

    • If the banana is over-ripe then roast.
