Kerala Style Chicken Cutlet

INGREDIENTS:

FOR THE FILLING:

  • Boiled Potatoes -  2
  • Onion - 2
  • Ginger garlic paste - 2 tbsp
  • Green chili - 4
  • Turmeric powder - ¼ tsp
  • Garam masala -  1½ tsp
  • Pepper powder - 1½ tsp
  • Curry leaves - 2 sprigs
  • Coriander leaves 

FOR COOKING CHICKEN:

  • Chicken - 500 g
  • Pepper powder - ½  tsp
  • Salt - to taste
  • Water 


FOR COATING:

  • Egg - 1 
  • Pepper powder 
  • Salt
  • Bread crumbs 

METHOD:

FILLING:

    1. In a cooker, put all the ingredients listed under " for cooking chicken" and Cook on a medium flame for a whistle.
    2. Mince the cooked chicken and keep aside.
    3. Mash the boiled potatoes and keep aside.
    4. In a pan, heat oil.
    5. Add chopped onionsgreen chili, and curry leaves. Saute till the onions become transparent.
    6. Add ginger-garlic paste and saute for a  minute.
    7. Add garam masala, turmeric powderpepper powder and salt one by one on a low flame and saute till the raw smell goes.
    8. Add the minced chicken and coriander leaves. saute well.
    9. Add mashed potatoes and mix well.
    10. Remove from the stove and allow the mixture to cool.

COATING:

    1. In a bowl beat eggpepper, and salt.
    2. In another bowl, add the breadcrumbs.
    3. Make medium-sized balls using the filling.
    4. Flatten the balls into thick patties or to the desired shape.
    5. Dip it in egg batter and then in breadcrumbs.
    6. In a pan heat oil and deep fry. Serve hot.

TIPS:

  • You can also use maida paste instead of egg mixture.
  • Adjust the amount of green chili and pepper according to your taste.
  • You can also use rusk powder instead of breadcrumbs.
