Kerala Style Chicken Cutlet
INGREDIENTS:
FOR THE FILLING:
- Boiled Potatoes - 2
- Onion - 2
- Ginger garlic paste - 2 tbsp
- Green chili - 4
- Turmeric powder - ¼ tsp
- Garam masala - 1½ tsp
- Pepper powder - 1½ tsp
- Curry leaves - 2 sprigs
- Coriander leaves
FOR COOKING CHICKEN:
- Chicken - 500 g
- Pepper powder - ½ tsp
- Salt - to taste
- Water
FOR COATING:
- Egg - 1
- Pepper
powder
- Salt
- Bread
crumbs
METHOD:
FILLING:
- In a cooker, put all the ingredients listed under " for cooking chicken" and Cook on a medium flame for a whistle.
- Mince
the cooked chicken and keep
aside.
- Mash the boiled potatoes and keep aside.
- In a pan, heat oil.
- Add chopped onions, green chili,
and curry leaves. Saute till the onions become transparent.
- Add ginger-garlic paste and saute for a minute.
- Add garam masala, turmeric powder, pepper powder and salt one by one on a low flame and saute till the raw smell goes.
- Add the minced chicken and coriander leaves. saute well.
- Add mashed potatoes and mix well.
- Remove from the stove and allow the mixture to cool.
COATING:
- In a bowl beat egg, pepper, and salt.
- In
another bowl, add the breadcrumbs.
- Make medium-sized balls using the filling.
- Flatten the balls into thick patties or to the desired shape.
- Dip it in egg batter and then in breadcrumbs.
- In a pan heat oil and deep fry. Serve hot.
TIPS:
- You can also use maida paste instead of egg mixture.
- Adjust the amount of green chili and pepper according to your taste.
- You
can also use rusk powder instead of breadcrumbs.
