Easy Potato-Brinjal Masala / Aloo Baingan ki Sabji








INGREDIENTS:

  • oil
  • Dry red chili - 4
  • Onion - 1
  • tomato - 2
  • Green chilly - 5
  • brinjal - 4 small
  • Potato -2 medium (peeled)
  • Chilli powder - 1 tsp
  • Turmeric powder - ¼ tsp
  • Salt
  • Garam masala - ¼ tsp
  • Coriander leaves 

METHOD:

  1. Cut the potatoes and brinjals into medium size. Keep them in water separately to prevent discoloration.
  2. In a pan, heat oil, add dry red chilies and saute well.
  3. Add onions along with green chili, and salt. Saute till the onions become transparent.
  4. Now add turmeric powder and chili powder. Saute till the raw smell goes.
  5. Add the chopped tomatoes and cook till nice and soft. Check the salt.
  6. Add brinjal and potatoes.Mix well and cook for 10- 15  minutes.
  7. Make sure the potato is cooked well. Now, mash the brinjal and potatoes slightly. 
  8. Sprinkle garam masala and fresh coriander leaves.
  9. It is an ideal dry curry recipe to be served with roti and chapati for lunch or dinner.

TIPS:
