Hyderabadi Mutton Biryani / Pakki Hyderabadi Gosht Biryani

INGREDIENTS:


    • Mutton - ½ kg


FOR MARINATION:


    • Hung curd - ½ cup
    • Ginger garlic paste - 1 tbsp
    • Chilli powder - 1 tsp
    • Turmeric powder - ½  tsp
    • Garam masala - 1 tsp
    • Salt - to taste

FOR MASALA:

    • Onion - 4 (sliced)
    • Cardamon 
    • Bay leaves 
    • Cinnamon
    • Cloves
    • Ginger-garlic paste - 1 tbsp
    • Green chili - 6
    • Tomato -   2 (chopped) 
    • Chilli powder - 1 tsp
    • Garam masala - 1 tsp
    • Pepper powder - 1 tsp
    • Salt - to taste
    • Coriander leaves
    • Mint leaves 

FOR RICE:

    • Basmati rice - 4 cup
    • Bay leaves
    • Cardamon
    • Cinnamon
    • Cloves
    • Water - 8 cup
    • Salt - to taste

METHOD:

    1. Marinate mutton using the ingredients mentioned under "for marination" and keep aside for 4 hours.
    2. Meanwhile soak basmati rice for half an hour. After 30 minutes, strain the rice very well and keep aside.
    3. In a pan, heat oil and add onions. Fry the onions stirring occasionally till they turn brown almost about to caramelize and set aside.

FOR MAKING MUTTON MASALA:

    1. In a cooker, heat ghee.
    2. Add cardamom, cinnamon, bay leaves, and cloves and saute well.
    3. Add ginger-garlic and green chili paste and saute for a minute.
    4. Add chili powder,garam masala, pepper powder, and salt one by one on a low flame and saute till the raw smell goes.
    5. Add the chopped tomatoes and cook till nice and soft.
    6. Now add half of the Caramelized onion and marinated mutton. Mix well.
    7. Add mint and coriander leaves.
    8. Cook on a medium flame for 2-3 whistles.



FOR COOKING RICE:

    1. In a pan. Heat 2 tbsp ghee. Add cinnamon, bay leaves, cardamon, and cloves.
    2. Add soaked basmati rice and salt and saute for a while.
    3. Add boiled water.
    4. Cook the rice until it is 70% done.


FOR DUM :

    1. In a biryani pot, layer it with mutton masala and rice on top.
    2. Add saffron/turmeric in hot milk all over the rice.
    3. Garnish with deep-fried onionscoriander leaves, and mint leaves.
