Hyderabadi Mutton Biryani / Pakki Hyderabadi Gosht Biryani
INGREDIENTS:
FOR MARINATION:
- Hung curd - ½ cup
- Ginger garlic paste - 1 tbsp
- Chilli powder - 1 tsp
- Turmeric powder - ½ tsp
- Garam masala - 1 tsp
- Salt - to taste
FOR MASALA:
- Onion - 4 (sliced)
- Cardamon
- Bay leaves
- Cinnamon
- Cloves
- Ginger-garlic paste - 1 tbsp
- Green chili - 6
- Tomato - 2 (chopped)
- Chilli powder - 1 tsp
- Garam masala - 1 tsp
- Pepper powder - 1 tsp
- Salt - to taste
- Coriander leaves
- Mint leaves
FOR RICE:
- Basmati rice - 4 cup
- Bay leaves
- Cardamon
- Cinnamon
- Cloves
- Water - 8 cup
- Salt - to taste
METHOD:
- Marinate mutton using the ingredients mentioned under "for marination" and keep aside for 4 hours.
- Meanwhile soak basmati rice for half an hour. After 30 minutes, strain the rice very well and keep aside.
- In a pan, heat oil and add onions. Fry the onions stirring occasionally till they turn brown almost about to caramelize and set aside.
FOR MAKING MUTTON MASALA:
- In a cooker, heat ghee.
- Add cardamom, cinnamon, bay leaves, and cloves and saute well.
- Add ginger-garlic and green chili paste and saute for a minute.
- Add chili powder,garam masala, pepper powder, and salt one by one on a low flame and saute till the raw smell goes.
- Add the chopped tomatoes and cook till nice and soft.
- Now add half of the Caramelized onion and marinated mutton. Mix well.
- Add mint and coriander leaves.
- Cook on a medium flame for 2-3 whistles.
FOR COOKING RICE:
- In a pan. Heat 2 tbsp ghee. Add cinnamon, bay leaves, cardamon, and cloves.
- Add soaked basmati rice and salt and saute for a while.
- Add boiled water.
- Cook the rice until it is 70% done.
FOR DUM :
- In a biryani pot, layer it with mutton masala and rice on top.
- Add saffron/turmeric in hot milk all over the rice.
- Garnish with deep-fried onions, coriander leaves, and mint leaves.
