INGREDIENTS
- Chicken - 1/2 kg (bone-in or boneless)
- Coconut oil
TO MARINATE:
- Ginger garlic paste – 3 tsp
- Onion - half an onion (chopped)
- Chilli powder – 2 tbsp
- Turmeric powder – ½ tsp
- Pepper Powder – 1 ½ tsp
- Lemon juice – 2 tsp
- Curry leaves – 2 sprig
- Salt -to taste
- Coconut oil
- Water - 2 tbsp
METHOD:
- Clean the chicken pieces properly. Squeeze it well so as to remove water from it.
- Mix all the ingredients mentioned under to marinate along with 2 tbsp of water to make a thick paste.
- Marinate the chicken properly with the above mix.
- In a pan, cook the chicken till it becomes soft and tender on a medium flame with its lid on. Little water can be added while cooking if the chicken doesn't release enough moisture.
- Open the pan and if stock is there, cook without putting the lid till its fully dry.
- After the water is completely drained, add 3 tbsp of coconut oil into it along with some curry leaves.
- Dry roast the chicken until it turns brown in color.
- Goes well with rice, Malabar paratha, or roti.
TIPS:
- Using coconut oil is best for all authentic Kerala recipes.
- You can vary the amount of chili and pepper powders to suit your spice level.
- Always put curry leaves when you are frying chicken pieces. It will give good taste.
