INGREDIENTS:
- Ripe Mango - 2 numbers (peeled)
- Turmeric powder - ¼ tsp
- Chilli powder - ¼ tsp
- Green chilly - 3 (slit)
- Salt - to taste
- Water
- Curry leaves - 1 sprig
GRIND:
- Coconut - ½ cup
- Cumin seeds - ½ tsp
- Green Chilli - 1
- Curry leaves
- Turmeric powder - ¼ tsp
SEASONING:
- Coconut oil
- Mustard seeds - ½ tsp
- Dry red chilies - 4
- Fenugreek - ½ tsp
- Curry leaves - 1 sprig
METHOD:
- In a manchatti or pan, add peeled mangoes along with turmeric powder, chili powder, salt, green chili, and curry leaves. Add enough water to cover the mangoes.
- Boil till the mangoes are well cooked and soft.
- Grind together the ingredients listed under ‘grind’ with little water to form a nice coarse paste.
- Now add coconut paste, cook in low flame for at least 3-5 minutes until the raw smell of coconut mixture leaves.
- In a pan, heat coconut oil.
- Splutter mustard seeds and fenugreek.
- Fry dry red chilies and curry leaves.
- Pour this into the curry, mix well and serve hot.
TIPS:
- You can also add yogurt before seasoning.
- Make sure you don't boil after adding yogurt.
- If the mango is not sweet enough, add little sugar or jaggery.
