INGREDIENTS:
- Mango-ginger / Manga-inji- 1 cup
- Coconut oil - 3 tbsp
- Tamarind water - lemon size
- Jaggery - 1 tbsp
- Fenugreek seeds - ¼ tsp
- Green chilly - 10 - 12 numbers
- Dry red chilli - 3
- Mustard seeds - 1 tsp
- Curry leaves - 2 sprigs
SPICES:
- Red chili powder- ½ tsp
- Turmeric powder- ¼ tsp
- Asafoetida - pinch
- Fenugreek powder - pinch
- Salt - to taste
METHOD:
- Soak tamarind in 1 cup of hot water, squeeze to extract the juice and keep it aside.
- In a pan, heat coconut oil.
- Splutter mustard seeds and fenugreek.
- Fry dry red chilies and curry leaves.
- Add mango-ginger and green chili. Fry till the mango ginger turns brown.
- Add all the spices one by one on a low flame and saute till the raw smell goes.
- Add tamarind water along with jaggery.
- Stir occasionally till the quantity reduces to a saucy texture.
