Puli Manga-Inji

INGREDIENTS:

    • Mango-ginger / Manga-inji- 1 cup
    • Coconut oil - 3 tbsp
    • Tamarind water - lemon size
    • Jaggery - 1 tbsp
    • Fenugreek seeds - ¼  tsp
    • Green chilly -  10 - 12 numbers
    • Dry red chilli - 3
    • Mustard seeds - 1 tsp
    • Curry leaves - 2 sprigs

SPICES:

    • Red chili powder- ½ tsp
    • Turmeric powder- ¼ tsp
    • Asafoetida - pinch
    • Fenugreek powder - pinch
    • Salt - to taste

METHOD:

    1. Soak tamarind in 1 cup of hot water, squeeze to extract the juice and keep it aside.
    2. In a pan, heat coconut oil.
    3. Splutter mustard seeds and fenugreek.
    4. Fry dry red chilies and curry leaves.
    5. Add mango-ginger and green chili. Fry till the mango ginger turns brown.
    6. Add all the spices one by one on a low flame and saute till the raw smell goes.
    7. Add tamarind water along with jaggery.
    8. Stir occasionally till the quantity reduces to a saucy texture.
