Chicken Biryani

INGREDIENTS:


    • Chicken - 500 g



FOR MARINATION:


    • Ginger Garlic paste -  1 tsp
    • Turmeric powder - ¼ tsp
    • Chili powder - 2 tsp
    • Lemon juice - 1 tsp
    • Salt - to taste



FOR RICE:


    • Ghee - 2 tbsp
    • Bay leaves - 2 numbers
    • Cloves - 3 numbers
    • Cardamon  -  2 numbers
    • Cinnamon  - 2 numbers
    • Onion - ½ 
    • Salt
    • Jeera rice - 2 cups
    • Water - 4 cups


FOR MASALA:

    • Oil
    • Onion  - 4 (sliced)
    • Ginger Garlic paste  - 3 tsp
    • Green chili paste - 2 tsp
    • Tomato - (2 chopped)
    • Turmeric powder  - ¼ tsp
    • Garam masala  -  ½ tsp
    • Salt

METHOD:

  1. Mix together ingredients listed under " for marination ". Marinate the chicken well and keep aside for 1 hour.
  2. In a pan. Heat 2 tbsp ghee. Add cinnamon,  bay leaves, cardamon, and cloves. Add onions and saute till they turn translucent.
  3. Add the rice and mix well. Saute for 3-4 minutes.
  4. Add hot water and required salt.
  5.  Cover and cook until rice is done. 
  6. Heat oil in a pan . Add onions and saute till they turn translucent.
  7. Add ginger-garlic and green chili paste and saute for a minute.
  8. Add garam masala, turmeric powder, and salt. saute till the raw smell goes.
  9.  Add the chopped tomatoes and cook till nice and soft.
  10. Add marinated chicken and mix well.
  11. Cover the pan and cook until chicken is done.
  12. Layer a deep heavy-bottomed pan with alternating layers of rice and chicken masala. But make sure the top layer is rice. 
  13. To 'dum' biryani, place the pan on a large tawa over low heat for 10 minutes.
  14. Now you can garnish the top of biryani with fried cashew nuts, raisins, onions and chopped coriander leaves. serve it with chicken fry, pickle and salads.

NOTES:

  • To cook rice in pressure cooker: cook until 1 whistle on high flame and let the pressure come down.
  • You can also add lemon juice while preparing rice to prevent it from sticking to each other.
