Tapioca roast/ Kerala kappa roast




INGREDIENTS:

    • Tapioca - 500 gm
    • Coconut oil - 2 tbsp
    • Black mustard seeds - ½ tbsp
    • Curry leaves - 2 sprig
    • Dry red chilies - 4
    • Garlic - 5 cloves (crushed)
    • Turmeric powder - ¼ tsp
    • Salt to taste
    • Green chilly - 5 (according to taste)
    • Water


METHOD:

      1.  Peel the tapioca and wash it thoroughly to remove any dirt.
      2.  Cut into rough cubes by driving the knife in and splitting it off the center of the tapioca.
      3.  Cook the tapioca in a cooker with enough water to cover it by an inch, salt and turmeric.
      4.  Cook on a medium flame for 2-3 whistles.
      5.  In a non-stick pan, heat coconut oil.
      6.  Splutter mustard seeds and fry dry red chilies and curry leaves.
      7.  Add crushed garlic and saute well.
      8.  Bring down the heat to low and add a pinch of turmeric powder.
      9.  Add cooked tapioca pieces.
      10.  Adjust salt and continue to stir until the spices coat the tapioca.
      11. Serve hot with tea, fish curry or beef fry. Enjoy!.
