Tapioca roast/ Kerala kappa roast
INGREDIENTS:
- Tapioca - 500 gm
- Coconut oil - 2 tbsp
- Black mustard seeds - ½ tbsp
- Curry leaves - 2 sprig
- Dry red chilies - 4
- Garlic - 5 cloves (crushed)
- Turmeric powder - ¼ tsp
- Salt to taste
- Green chilly - 5 (according to
taste)
- Water
METHOD:
- Peel the tapioca and wash it thoroughly to remove any dirt.
- Cut into rough cubes by driving the knife in and splitting it off the center of
the tapioca.
- Cook the tapioca in a cooker with enough water to cover it by an inch, salt and
turmeric.
- Cook on a medium flame for 2-3 whistles.
- In a non-stick pan, heat coconut oil.
- Splutter mustard seeds and fry dry red chilies and curry leaves.
- Add crushed garlic and saute well.
- Bring down the heat to low and add a pinch of turmeric powder.
- Add cooked tapioca pieces.
- Adjust salt and continue to stir until the spices coat the tapioca.
- Serve
hot with tea, fish curry or beef fry. Enjoy!.
