Banana Rice Dumpling Payasam | Kayiyum Pidiyum

INGREDIENTS:



  • Banana / Nendra pazham- 2
  • Jaggery - 100 g



RICE DUMPLING:

  • Rice flour -1 cup
  • Cumin seed - ¼ tsp
  • Fennel seed - 1 tsp
  • Coconut - ¼ cup
  • Salt
  • Water

FOR COCONUT MILK:

  • Coconut - 1/2 
  • Water 

SEASONING:

  • Ghee
  • Cashew nut 
  • Raisins 

METHOD:

TO PREPARE RICE DUMPLING:

    1. Grind coconut, fennel seed, cumin seed in a grinder .keep aside (just a pulse)
    2. In a bowl add rice flour along with the grounded pastesalt, and water. Make a dough.
    3. After 20 minutes, grease your hands with some ghee and start making the rice dumplings by making small cylindrical shaped dumplings with the dough. 
    4. Make the dumplings using all the dough and keep aside.

TO PREPARE COCONUT MILK:

    1. Let's make first milk by grinding the grated coconut and 1 cup of water in a grinder until smooth. 
    2. Once done squeeze and pour it over a strainer and take the first milk out.keep aside.
    3. To make the second milk, add the coconut back into the grinder and add 2 cups of water and grind it once again. 
    4. Squeeze and pour it over a strainer and take the second milk out.

TO ASSEMBLE:

    1.  In a pan, heat ghee, add cashews, and raisins. keep aside.
    2. In a saucepan, heat the second milk.
    3. To that add the rice dumplings and cook.
    4. After it is cooked, add jaggery.
    5. Reduce the heat, and allow the coconut milk to simmer and reach a thick consistency.
    6. To this add chopped bananas. Cook till the banana's turn bright yellow.
    7. Once everything is done, add the first milk. Adjust the sweetness.
    8. Add the cashews and raisins.

TIPS:

  • You can also substitute jaggery with sugar.
