Mutton Biryani

INGREDIENTS:

  • Mutton - 500 g

FOR RICE:

  • Ghee - 2 tbsp
  • Bay leaves - 2 numbers
  • Cloves - 3 numbers
  • Cardamon  -  2 numbers
  • Cinnamon  - 2 numbers
  • Onion - ½ 
  • Water - 4 cups
  • Jeera rice - 2 cups
  • Salt

FOR MASALA :

  • Oil
  • Onion  - 4 (sliced)
  • Ginger Garlic paste  - tbsp
  • Green chili paste - 2 tsp
  • Tomato - (2 chopped)
  • Turmeric powder  - ¼ tsp
  • Garam masala  -  ½ tsp
  • Salt
  • Pepper powder - 1 tsp
  • Coriander leaves



METHOD:

FOR RICE:

    1. In a pan. Heat 2 tbsp ghee. Add cinnamon,  bay leaves, cardamon, and cloves. Add onions and saute till they turn translucent.
    2. Add the rice and mix well. Saute for 3-4 minutes.
    3. Add hot water and required salt.
    4. Cover and cook until rice is done.



FOR MASALA : 

    1. In a cooker, add oil.
    2. To that add onions, ginger-garlic, and green chili paste and mix well. (refer tips)
    3.  Add the chopped tomatoes, mutton, salt, and pepper powder. Mix well.
    4. Let it cook for about 5-6 whistles or till the mutton becomes soft and tender.
    5. Now open the cooker and put garam masala, coriander leaves and saute well.



FOR DUM:

    1. Layer a deep heavy-bottomed pan with alternating layers of rice and mutton masala. But make sure the top layer is rice. 
    2. To 'dum' biryani, place the pan on the stove over low heat for 10 minutes.
    3. Now you can garnish the top of biryani with fried cashew nuts, raisins, onions, and chopped coriander leaves. serve it with, pickles and salads.

TIPS:

  • There is no need to saute onions and tomatoes. It's time-saving. Isn't it?
