INGREDIENTS:
- Ghee - 2 tbsp
- Bay leaves - 2 numbers
- Cloves - 3 numbers
- Cardamon - 2
numbers
- Cinnamon - 2
numbers
- Onion - ½
- Water - 4 cups
- Jeera rice - 2 cups
- Salt
FOR MASALA :
- Oil
- Onion - 4 (sliced)
- Ginger Garlic paste - 2 tbsp
- Green chili paste - 2 tsp
- Tomato - (2 chopped)
- Turmeric powder - ¼ tsp
- Garam masala - 1 ½ tsp
- Salt
- Pepper powder - 1 tsp
- Coriander leaves
METHOD:
FOR RICE:
- In
a pan. Heat 2 tbsp ghee. Add cinnamon, bay leaves, cardamon, and cloves.
Add onions and saute till they
turn translucent.
- Add
the rice and mix well. Saute
for 3-4 minutes.
- Add
hot water and required salt.
- Cover
and cook until rice is done.
FOR MASALA :
- In a
cooker, add oil.
- To that add onions, ginger-garlic, and green
chili paste and mix well. (refer tips)
- Add
the chopped tomatoes, mutton, salt, and
pepper powder. Mix well.
- Let
it cook for about 5-6 whistles or till the mutton becomes soft and tender.
- Now
open the cooker and put garam masala, coriander leaves and saute well.
FOR DUM:
- Layer
a deep heavy-bottomed pan with alternating layers of rice and mutton masala. But make sure the top layer is rice.
- To 'dum' biryani, place the pan on the stove over low heat for 10 minutes.
- Now you can garnish the top of biryani with fried
cashew nuts, raisins, onions, and chopped coriander leaves. serve it with,
pickles and salads.
TIPS:
- There is no need to saute onions and tomatoes. It's time-saving. Isn't it?
