Pani Puri

INGREDIENTS:

  • Boondi

PURI

  • Rava - 1 cup
  • Maida - 2 tbsp
  • Baking soda - pinch
  • Salt

PANI:


  • Mint leaves -  ½ cup 
  • Coriander leaves - 1 cup
  • Ginger - 1 inch 
  • Green chili - 3
  • Tamarind - lemon sized
  • Jaggery- 3- 4 tbsp (sugar or dates)
  • Cumin powder  - 1 tsp
  • Chat powder - 1 tsp
  • Water 
  • Salt 

FILLING

  • Potatoes (Boiled ) - 1 cup
  • Chickpeas  / Bengal gram (Boiled) - 1 cup
  • Onions - 1 (Chopped)
  • Salt 
  • Turmeric -  a pinch
  • Chili powder - ¼ tsp
  • Garam masala - a pinch
  • Coriander powder - a pinch
  • Chat powder - a pinch
  • Cumin powder - a pinch
  • Coriander leaves 

METHOD:

FOR STUFFING:

    1. Mash the boiled potatoes.
    2. In a small bowl, mix the potatoes, onions, boiled chickpeas, coriander leaves, cumin powder, chaat masala powder, turmeric powder, chili powder,garam masala, coriander powder, and salt. Mix well and keep aside.

FOR PANI :

    1. In a blender add all the ingredients mentioned under "pani".
    2. Add water and grind to a fine chutney.
    3. Transfer it to a bowl and add more water and adjust the consistency.
    4. To that add boondi and salt.

FOR PURI:

    1. In a bowl, take all the ingredients mentioned under "puri" and mix well.
    2.  Add water till you get a soft and smooth dough. Knead for a few minutes.
    3. Apply some oil all over the dough and cover it with a wet cloth, keep aside for 30-40 minutes.
    4. Now divide the dough into two or three parts, take one part, and roll into a very thin chapati. 
    5. Keep the remaining parts of the dough covered with the moist kitchen towel.
    6. With a cookie-cutter/bottle cap /small bowl, cut small to medium discs from the rolled dough chapati.  
    7. In a pan, heat oil and fry them.

PROCESS:

  1. Crack the top of the Puri with thumb or spoon.
  2. Add some stuffing.
  3. Now dip the stuffed puri in pani and serve immediately.
