INGREDIENTS:
- Mutton - ½ kg
- Ghee - 3 tbsp
- Garlic - 1 tbsp
- Ginger - 1 tbsp
- Green chilies - 3
- Onions - 3
- Whole Pepper - 1 ½ tsp
- Cardamom - 3
- Cinnamon - 3
- Cloves -3
- Shahi jeera / black cumin- 1 tsp
- Bay leaves - 1
- Normal jeera/cumin seed- 2 tsp
- Water
CEREAL MIXTURE:
- Whole Wheat / Polished wheat - ½ cup
- Ghee - 3 tbsp
- Whole Pepper - 1 ½ tsp
- Masur dal - 1 tbsp
- Toor dal - 1 tbsp
- Bengal Gram Dal - 1 tbsp
- Cardamom - 3
- Cinnamon - 3
- Cloves -3
- Shahi jeera - 1 tsp
GARNISHING:
- Mint leaves
- Fried cashews
- Ghee
- Caramelized onion - 1
METHOD:
- In a pan, add 3 tbsp ghee.
- Put 3 cardamoms, 3 cloves, 3 cinnamon, 1½ tbsp whole pepper, and 1 tsp shahi jeera.
- Now, add whole wheat and all the other dals mentioned under the "cereal mixture".
- Saute and keep aside.
- In a cooker, add 3 tbsp ghee.
- Put 3 cardamoms, 3 cloves, 3 cinnamon, 1½ tbsp whole pepper, 1 bay leaves, and 1 tsp shahi jeera and 1 tsp normal jeera.
- Add onions,ginger-garlic paste, green chili and saute till raw smell goes.
- Add mutton and salt.
- Add the sauteed cereal mixture to it.
- Add enough water and 5-6 whistles.
- Mash it well with your hands or mixer excluding the bones.
- Heat it again and add 4 tbsp ghee. Mix well.
- Garnish with fried cashews, caramelized onions, and mint leaves.
TIPS:
- Make sure you add enough water so that it doesn't get burned.
- You can also add 1 tsp of rose water while mashing.
